Happy Thursday! Today I’m sharing a delicious – and just as important in a busy week – EASY stuffed peppers recipe.

Anyone who knows me well, knows I’m not the best cook…in our house, Eric is definitely the chef! He’s quite the experimenter, whipping up all sort of tasty meals during the week. I’m a lucky gal.

But hey, I make a fabulous assistant – and I’m most certainly the baker in our little family!

All that being said, you’ll be proud to know I actually whipped up the yummy meal you see here with E’s easy directions. Read on for our stuffed peppers recipe so you can give it a try yourself!

Ingredients – Makes 4 stuffed pepper halves.

  • 2 large red bell peppers
  • 1 lb. ground beef (possible substitutes: ground turkey, chicken breast, or more of your favorite veggies!)
  • 2 tbsp butter
  • Salt
  • Pepper
  • Rosemary (or any other seasoning you might want to throw on a few sprinkles of!)


  • Preheat the oven to 375 degrees.
  • Cut the red peppers in half and place on a baking sheet covered with foil.

  • Sprinkle salt and pepper on the ground beef. Mix by hand. Make four equal sized balls.

  • Flatten each one into each one of the pepper halves. Sprinkle some rosemary and add a sliver of butter (generosity may vary) on top of each pepper.

  • Place in the oven for 35 minutes. Check to ensure the meat cooked (every oven is different, of course!) and let cool.

I served with with brown rice and veggies, nothing fancy, but still oh-so-yum! If you want to step up your game, I suggest some red wine. Even if you don’t, still suggest red wine.

Two posts in one week, what what! Life is a little chaotic right now and that means I just gotta do the best I can – because not everything is going to get done all the time. Whether that be laundry, blogging, cleaning, etc. Anyone with me??

Even though life is chaotic, it’s also very, very exciting! 44 days left until Eric and I get married – eeeek!!! Now that we’re almost a month out, it seems like we’re at the turning point where we are bouncing around everywhere and talking about how time can’t go by fast enough.

Now, it’s just a matter of staying calm and making sure we’re ahead of the game in as much of the final stuff as possible – and continuing to freak out about just how dang close we are!

Aside from all this wedding shenanigans, here is a scoop of life Currently

{Cooking // More in general…}

Ok, well mostly I am being the chef’s (aka Eric’s) assistant. This guy is cookin’ up fresh salmon, cajun dishes, baked pasta, the list goes on…

This week though, I whipped up some of my own goodness. Granted nothing I make is the fanciest of dishes, but hey, everyone’s gotta start somewhere! How about some freshly seasoned chicken, veggies, and whole grain rotini pasta for ya??

{Wearing // Still summer clothes?}

I think everyone’s been a little weirded out that we’re almost to the end of September and we’re still hitting up the 80s every day. I think everyone is also trying not to complain. As much as I want fall here (it’s my favorite!), I know after fall comes winter…and winter can mean polar vortex here in Chicago.

For now though, we’re still rockin’ the shorts, tanks, and dresses! You might’ve caught this white Target maxi on Instagram yesterday. I found it on sale for $12.99 in the Junior’s section and it’s pretty much my favorite sale find ever!

It was the perfect wedding shower dress and now I’ll keep wearing it until the weather says no.


{Counting down // to a VACATION.}

As mentioned earlier, E & I are obviously beyond ecstatic about the wedding. Can it be November tomorrow? We are also sooo pumped for a real vacation and to be able to travel again!!

Without a doubt going home to Texas always makes us so happy, but this year we’ve missed exploring out of the country since we’ve saved up time and money for the big day. The morning after though, we’ll be jet setting off to Jamaica and we can’t freakin’ wait.

The wait will totally be worth it and much needed after all these busy months. I remember people having said they needed the honeymoon after all this wedding stuff, and I used to be like oh sure, but it’s probably been so fun, they’re probably exaggerating. And it is SO FUN (I’m going to miss it so much!!!), but it’s also just tiring and can feel like a lot.

So I get it now…you really do need the honeymoon. It’ll be a well-deserved getaway with my best friend to celebrate our next chapter as Mr. & Mrs. WAHOO!

Eating // Homemade Pasta

Eric is such a good cook, y’all. I’m oh so lucky I get to marry a man who is quite talented in the kitchen and loves it. Earlier this week, we had spaghetti pasta with hot Italian sausage, garlic, cherry tomatoes,  red onion, and basil. I was able to snag extras for a couple lunches this week.

I’d like to claim we made it together, but it was mostly Eric’s work. Let’s not forget the tasty bread I dressed with olive oil and toasted in the oven though.

Enjoying // ClassPass

This one-stop-shop monthly membership lets you access a large network of fitness studios, varying from cycling to barre to circuit training. A group of friends and I purchased their two week trial going on for $19, and have had lots of fun running around town trying all these cool studios. The trial is so worth it, you get to test out all these workouts and pretty much get your money back after doing just one class.

Sadly, our two weeks are just about up, and the monthly membership ($119) is a little more than I’d like to pay for a gym right now. I definitely recommend checking the trial out though if this grabs your interest!

Looking // Wedding Colors & Bridesmaids’ Styles

Next month, we’ve got a big weekend to Austin planned to pick out wedding florals, reception table décor, and take engagement photos…AH. So excited and also feeling the pressure of making decisions – what’s new haha. That being said, this week I’ve been looking at lots of different palettes and working with my girls to decide what dress color they should wear.

Like I mentioned a couple days ago, the last couple weeks have been a whirlwind! I’ve had every intention of sitting down to write, but time has escaped me. That being said, it’s all good, because I’ve been taking advantage of free moments to explore the city and spend time with the people who have made living here so wonderful.

So, here are a bunch of things I’ve been doing all this time instead of blogging:

Having brunch like it’s my job //

This has definitely become a weekly occasion.

Two Sundays ago, we went to Acoustic Brunch at Schuba’s Harmony Grill. It was awesome. Free live music + breakfast food? Yes, please.

This past weekend, Becca and I had a roomie date at Ann Sather’s, where we finally satisfied Becca’s basically two month long craving for cinnamon rolls.

At what point have you gone too far in your pumpkin grocery purchases?

Becca and I may have reached that threshold, but it’s fine. We just bought a variety seven pumpkin items in one visit. We’re fine. We’re not being ridiculous or anything. Right? Right???

My favorite purchase though is definitely the ravioli. SO YUM. Highly recommend it.

Developing a new addiction //

It’s La Croix. I’ve always sworn off carbonated water because I didn’t like the taste, but who knew when you added every fun fruity flavor to it under the sun, it’s actually really good??

Our work fridge has a never ending supply and I never fail to grab one for lunch. And maybe another in the afternoon. Or two if I really want to feel refreshed, but who’s counting?

I’m not even a fan of apricots, but I think it might be my favorite flavor. If you want to know what being obsessed with La Croix is like, this Buzzfeed article is pretty spot on.

Watching UT beat OU //

This was so amazing!! A couple weeks ago, the annual Red River Showdown between The University of Texas and The University of Oklahoma took place at the Texas State Fair in Dallas. I was prepared for the worst, seeing as we had been c r u s h e d by TCU the week before, but the Longhorns put their game faces on and we killed it.

Chicago Texas Exes Chapter put this on FB and I felt famous.

I was ecstatic they won in just general, but also ecstatic they won for Eric’s sake, because I feel like he would’ve gone into a mild depression. Missing this game and the fair’s fried food for the first time in years was eating him alive all week.

Also, taking a moment to love on our real life Longhorn mascot, Bevo XIV. Unfortunately, he was not able to make the trip to Dallas and passed away from cancer last week. Bevo XIV got to be apart of some awesome moments for our school though, and was also the king of social media – evidence here. Rest in peace, big guy.

Feeling really domestic for once //

Remember the 30 apples we all came home with from apple picking? Eric and I wanted to bake something to use some, and found an easy apple turnover recipe that used a whole whopping two of them.

You guys, these turnovers were the bomb. They turned out great. I think I will whip this recipe out over the holidays to impress everyone and pretend I’m a master chef.

Also, in case anyone was curious, between Becca, Eric, and I, we got through most of those apples. I was really proud of us.

Running into Barcelona friends //

This was such a cool moment! Over the summer during our month long Europe backpacking trip, Eric and I became good friends in Barcelona with three awesome guys from North Carolina. We had completely forgot one of them, Chris, was now living in Detroit, and he’d forgotten we were in Chicago.

As Eric and I were walking around downtown one Saturday, I randomly spotted Chris watching a magic show with his cousins and I had to do a double take before whispering to Eric if that’s who I thought it was! Turns out Chris came for a last minute weekend trip with his cousins. The three of got to catch up for a bit and now hope to plan real weekend visits to see each other.

It was such a cool feeling being reunited and knowing that we had that common bond of some amazing memories way overseas. Eric and I are already trying to plan our next foreign country trip.

Well, that sums up a lot of things that have been going on here in the city! All little moments, but all special moments.

Days By Day


One of my favorite things to do since being in Chicago is going for runs by Lake Michigan! I only have to walk a few blocks to reach a paved path right along the water and it is absolutely beautiful. Every time I get a mile out or so, I can’t help but stop and turn around to take in the scenery and breathe in the fresh air.

There are always so many people out – and lots of cute doggies – and on days when the weather is nice, it is pure bliss. I am definitely going to keep doing the best I can to take advantage of this treat that is literally right outside my door.


With such a busy week, I haven’t had time for much more exploration in the evenings since I come home exhausted. When I start to get really tired around 10:00 pm, I laugh at myself because I feel like an old woman. I did make time for a rare activity of mine a couple nights ago though – real cooking all by myself! My parents are so skilled in the kitchen, I have been spoiled all these years and unfortunately did not come away with all their talent. So, as you can imagine, I was pretty proud of my small accomplishment…since it was a pretty big one for me!

I can’t believe Week 3 has come and gone, this is crazy. I’m working hard to make sure I soak up every moment in this beautiful city and am excited to check out some cool things around town this weekend with my roommates. Hope everyone has a happy Friday!
